    Ingredients
    1 tspExtra Virgin Olive Oil
    1 cupOnion, diced
    1 cupCarrot, diced
    2 clovesGarlic, chopped​
    1/2 cupParsley, chopped
    2 cupsWater
    1 canNavy beans
    1 cupPotato, diced
    4 cupsNo salt vegetable broth
    1 cupZucchini, diced
    1 cupCabbage
    2 cupsFresh plum tomatoes
    1Bay leaf, diced​
    1 tspDried basil
    1 tspDried oregano
    1 tspDried thyme
    1 cupSeashell pasta
    To garnishSharp Cheese

    Directions

    1. Sauté 1 cup chopped onions in 1 tsp of Extra Virgin Olive Oil​.
    2. Add 4 cups of vegetable broth.
    3. Add 2 cups of water.
    4. Add in all the vegetables.
    5. Add 1-2 tbsps of dried herbs and spices.
    6. Add 3-4 cloves of garlic.
    7. Bring to a boil and let simmer for 60 minutes.
